Quick is not the word used to describe the cuisine traditional to Eritrea and Ethiopia. Every dish requires a long period of preparation and is slowly cooked with ingredients made by hand in order to be thoroughly infused with flavor in each bite.

While we have a plethora of meat dishes perfect to satisfy any carnivore’s palate, our cuisine is ideal for vegetarian and vegan observers. Many Eritreans and Ethiopians observe a 50-day fast period where they are restricted to an entirely plant-based diet. So what is served to our customers is served in our home as well.

The staple of our cuisine is known as Injera, which serves as your fork, knife and spoon. Eating with your hands is encouraged, but if utensils are needed, that’s alright too. Injera is a spongy pancake-like bread made in a crepe-like fashion with the grain known as teff. Teff is 100% gluten free and although most injera contains white flour, we offer “black injera” or teff-only injera. All effort will be made to accommodate those with gluten sensitivities.

Please visit the “Our Ingredients” page for more information on our frequently used ingredients native and hand delivered from Eritrea and Ethiopia.
